Sweet Potato and Zuchinni Pie

QUINOA, the supergrain, it is an ancient south amercian grain. It is gluten free, can often be used where you would use rice, or bulgar wheat in tabuleh. It is also high in protein and fibre. Nice nutty flavours, comes in white and red. Low GI, why would you not try it.

Sweet Potato and zucchinie pie
1 cup quinoa grain, rinsed and drained
2 cups water
1 T olive oil
1 medium onion, finely chopped
2 cloves garlic, finely chopped
400gm zucchini coarsely grated
500gm orange sweet potato, cooked and mashed
4 eggs
1 cup grated tasty cheese
Salt and pepper
1-2 tomatoes, thickly sliced
Preheat oven to 180C.
Place the quinoa in a small saucepan with the water. Bring to the boil, reduce the heat and simmer for 10 minutes, until all the water is absorbed.
Heat the oild in a small frying pan and sauté the onion until soft and golden, then place in a large bowl. Add the quinoa, garlic, zucchini, sweet potato, lightly beaten eggs, cheese, salt and pepper and mix until thoroughly combined.
Pour the mixture into a greased ovenproof dish and arrange the sliced tomato on top. Bake for 30-40 minutes, until the pie is set and browned on top.
