Spanikopita

A great vegetarian favourite of mine, I use left over brown rice.   Traditionally it is greek dish, try my healthy dish


 Spanokipita

 

1 onion chopped

3 garlic chopped

3 T olive oil

4 sheets of filo pastry

1 cup of cooked brown rice

40-50 large fresh spinach leaves approx. 500gm diced

Salt and pepper

4 eggs

100-150gm feta cheese

200gm cottage cheese

Sesame seeds

 

In a frypan, heat 1 T olive oil , sauté garlic and onion till soft and brown. Add diced and washed spinach leaves , add ½ cup of water to steam and then let cool. Mix in brown rice, cottage and feta cheese, and in seasoning and feta and cottage cheese. Pour into greased tin. Lightly brush each sheet of filo with olive oil, and place on top of pie filling and sprinkle with sesame seeds. Bake in oven at 180C for 30-40 minutes. Serve with a salad or as a side to a serve of protein.
